Chicken & Greens with Tuscan Lemon Dressing

INGREDIENTS

½ cup boiling water
4 lemon flavored tea bags
2 Tbsp olive oil
3 Tbsp honey
1 Tbsp white wine vinegar
⅛ tsp seasoned salt
6 cups mixed salad greens
1 lb cut-up cooked chicken
4 slices bacon, crisp-cooked and crumbled
¼ red onion, thinly sliced
1 cup raspberries
4 whole wheat dinner rolls

DIRECTIONS

● Pour boiling water over lemon flavored tea bags; cover and brew 5 minutes. Remove tea bags and squeeze; cool. With wire whisk, stir in olive oil, honey, vinegar and seasoned salt; set aside.

● On serving platter, arrange greens. Top with chicken, bacon, onion and raspberries, then drizzle with Tuscan Lemon Dressing. Serve with rolls.

Chipotle Turkey & Black Bean Chili

INGREDIENTS

¼ cup light butter substitute spread
1 large yellow bell pepper, chopped
1 1/4 lbs ground turkey
2 cups fat free reduced sodium chicken broth
1 can (28 oz.) no salt added diced tomatoes
¼ tsp ground black pepper
1 large onion, chopped
1 Tbsp cumin seed
1 to 2 chipotle peppers in adobo sauce, chopped
1 can (15.5 oz.) no-salt added black beans, rinsed and drained
¼ tsp salt
1 1/4 cups cooked brown rice

DIRECTIONS

● In 6-quart saucepot, melt spread over medium heat and cook onion, yellow pepper and cumin seeds, stirring occasionally, 8 minutes. Add turkey and cook, stirring occasionally, 5 minutes or until turkey is thoroughly cooked. Stir in chipotle pepper and cook 1 minute. Stir in remaining ingredients and bring to a boil. Reduce heat and simmer, stirring occasionally, 15 minutes or until heated through.

● Serve with rice.

INGREDIENTS
