Ingredients

1/2 cup unsalted butter, softened
1/2 cup sugar
1 egg
1/2 tsp vanilla extract
1/4 tsp peppermint extract
1 1/4 cup flour
1 tsp baking powder
1/4 cup cocoa powder

Whisk together the wet ingredients, then add the sifted dry ingredients to the bowl. Form the dough into a circular shape, then cover with plastic wrap and place in the refrigerator to cool. Cooling the cookies will help them keep a nice form when they are baking later. Chill for about 3 hours, or overnight.

To form the cookies, scoop out enough dough to make a 1-inch ball. Once you have the ball, press it down a bit to form a small cookie shape. Don't worry, it will expand slightly in the oven.

To decorate the cookies, choose any peppermint candy you like! For these cookies, I chose to use some classic peppermints and a few special edition peppermint-flavored M&M's. You could also use some crushed candy canes if you have any of those lying around!

Bake the cookies in the oven at 350 degrees for 10 minutes. Enjoy!

  1. Mix together the butter, sugar, egg, vanilla, and peppermint into a large bowl or electric stand mixer. Whisk together.
  2. In a separate bowl, sift the flour, baking powder, and cocoa powder in a medium bowl. Sprinkle into the wet mixture, and stir until the cookie dough is fully combined.
  3. Wrap up the cookie dough and let it sit in the fridge for at least 3 hours, or overnight.
  4. Once the dough is chilled, preheat the oven to 350 degrees.
