Ingredients

1/2 cup reduced-sodium chicken broth
3 Tbsp balsamic vinegar
5 tsp quick-cooking tapioca, crushed
1 Tbsp maple syrup
1/2 tsp salt
1/4 tsp black pepper
1 pound small round red potatoes, halved
4 medium carrots, cut into 2-inch lengths (2 cups)
3 stalks celery, cut into 1-inch chunks (1 1/2 cups)
1 medium onion, cut into 1-inch- thick wedges (1 cup)
8 large chicken drumsticks (3 to 4 pounds), skinned
2 tsp snipped fresh rosemary

How to Make It

  1. In a 5- to 6-quart slow cooker, combine the first six ingredients (through pepper). Top with potatoes, carrots, celery, and onion. Place chicken on top of the vegetables. Cover and cook on low 9 to 10 hours or on high 4 1/2 to 5 hours or until chicken is no longer pink (170°F) and vegetables are tender.
  2. Using a slotted spoon, remove chicken and vegetables to a platter. Drizzle with cooking liquid. Sprinkle with rosemary.
