Caramel Date Chocolate Chunk Ice Cream

Add a deliciously cool touch to your Valentine's Day meal with this chilly dessert. Eat This, Not That! medical review board member Lauren Manaker MS, RDN, LD, CLEC offers her recipe for a chocolate chunk ice cream that will leave your sweet tooth satisfied with nature's candy: dates. 

Serves 2

You'll need

  • 1/4 plus 1 tablespoon cup date syrup 
  • 2 cups whipping cream
  • 1 cup milk
  • 3 egg yolks, beaten
  • Pinch of salt
  • ½ teaspoon vanilla extract
  • ½ cup chocolate chunks

How to Make It

  1. In a medium saucepan, heat date syrup and whipping cream on low heat for 5 minutes, stirring occasionally. Remove from heat.
  2. Whisk milk, eggs, salt, and vanilla with whipping cream/date syrup mixture until combined. 
  3. Pour mixture into a chilled bowl and refrigerate for an hour, or until no longer hot. Add ice cream to an ice cream maker, following the manufacturer's directions. Add chocolate chunks as a "mix in" option according to ice cream maker's instructions when appropriate.
