The date syrup mimics the same rich, caramelized, sugary flavors of toffee while coating the fluffy popcorn kernels with a chewy, crackly sheen.

Ingredients

2 Tbsp coconut oil
1/2 cup popcorn kernels
1 cup date syrup
1/4 tsp vanilla extract
Pinch sea salt

How to Make It

  1. Melt the coconut oil in a large heavy-bottomed pot over medium-high heat.
  2. Once melted, add the popcorn kernels and cover the pot. Pop the popcorn, shaking the pot occasionally so the kernels don't burn, until you hear 1 to 2 seconds between pops. Transfer the popcorn into a large bowl.
  3. Immediately pour the date syrup and vanilla extract over the popcorn, add the salt, and toss to combine. Let cool slightly before eating.
