When I was visiting Austin, Texas, this past year, I consumed an absurd amount of tacos. Especially breakfast tacos, which have bits of potato in them! While I am a fangirl of all kinds of tacos, I was especially surprised by this combination. Potato chunks in tacos—really?
To my utter surprise, tacos with potato are absolutely delicious, and I'm kind of shocked I never thought of it until then. They are the perfect vegetable filler when you don't feel like packing up your taco with a lot of meat. They're also a great option for those who are looking for a vegetarian taco!
As I was putting together some taco recipes, I knew I needed to think up some kind of taco with potato in it. When I thought of making a potato and chorizo taco recipe, it made sense to use sweet potato rather than a regular white potato. Having salty, spicy chorizo with the sweetness of a sweet potato seemed like the perfect combination to me, and boy, was I right about this one.
Is the taco not spicy enough for you? Sprinkle in a tad more cayenne pepper when you make that chorizo! It will give this chorizo taco recipe a nice kick.

If you're a vegetarian, you can actually buy soy chorizo instead! This recipe was used with soy chorizo from Trader Joe's, but you can also find it easily on Instacart.

Spicy Chorizo and Sweet Potato Taco Recipe
Makes 4 servings
Ingredients
1 pound chorizo sausage
1 sweet potato, diced and cubed
1 tbsp olive oil
1 tsp garlic salt
1 tsp paprika
1 tsp salt
1 tsp pepper
1 avocado, diced
tortillas
taco cheese
salsa
How to Make It
- Preheat the oven to 400 degrees.
- In a large bowl, mix together the sweet potato cubes, olive oil, garlic salt, paprika, salt, and pepper.
- Spread the potatoes out on a baking sheet, and roast in the oven for 30 minutes.
- In a large skillet, break up the chorizo and cook.
- Mix the sweet potato and chorizo into a tortilla, and top with taco cheese, avocado, and salsa.
