S’mores Two Ways Recipe
Admittedly, it’s tough to improve upon the time-tested formula, but with the original as our inspiration and the grill as our muse, we think these two new iterations would do the Girl Scouts proud. Even better: They’ll actually help you maintain your flat stomach and lose weight. Now that’s a dessert.
What You’ll Need
Makes 4 servings
8 large marshmallows
8 metal skewers, or wooden skewers soaked in water for 30 minutes
2 Tbsp dulce de leche
16 chocolate wafer cookies (like Nabisco Famous Chocolate Wafers)
2 Tbsp smooth peanut butter
Chocolate–Peanut Butter & Chocolate-Caramel S’mores, 2 (1 of each)

How to Make It
Preheat a grill over medium heat. Place a marshmallow at the end of each skewer. (If everyone wants to toast their own marshmallows, pass them around to guests.) Grill the marshmallows, turning, for about 3 minutes, until lightly brown and toasted all over. If using a charcoal grill, remove the grate and roast the marshmallows close to the coals; if using a gas grill, you can place directly on the hot grate.
Spread ½ tablespoon of dulce de leche on each of 4 cookies and spread ½ tablespoon of peanut butter on each of another 4 cookies. Top each with a toasted marshmallow and another cookie. If you like, place the s’mores directly on the grill just long enough to warm, 1 to 2 minutes.
While swapping in peanut butter for chocolate in this recipe constitutes a step up in the nutrition status of the s’more, there are even greater strides that can be made while not sacrificing the overall feeling of decadence. Try pairing slices of banana with the peanut butter, slices of apple or pear with dulce de leche, or, in a riff on the classic s’mores construction, thick slices of strawberry with antioxidant-rich dark chocolate, one of the healthy fats we love.
