4 Tbsp fresh lime juice
2 Tbsp olive oil
2 jalapeños, seeded and finely chopped
½ teaspoon ground cumin
1 small red onion, spiralized (flat blade)
1 small head red cabbage, spiralized (flat blade)
1 medium-sized jicama, spiralized (thin spiral blade)
1 can black beans, drained and rinsed
1 cup corn kernals
½ cup chopped green onions
¼ cup chopped fresh cilantro
HOW TO MAKE IT
In a small bowl, whisk together lime juice, olive oil, jalapeños, cumin and 1 teaspoon salt to make a vinaigrette. Add the rest of the ingredients and toss to coat. Use to dress fish tacos or as a side dish for any spring or summer meal.
